Strawberry Cheesecake Bars
These low calorie cheesecake bars are a great low calorie dessert recipe!
Looking for a round cheesecake recipe, don’t fret, this low calorie dessert recipe can be made in a 9×13 dish, or in a springform pan.


Strawberry Cheesecake Bars
Equipment
- 9×13 dish
- OR spring form pan
- Spatula
Ingredients
Crust Ingredients
- 1 cup crushed low fat graham crackers
- 2 tablespoons melted butter
Cake Ingredients
- 3 packs 24 ounces of Fat Free cream cheese at room temperature
- ½ cup powdered sugar
- 1 ½ teaspoon vanilla extract
- ¾ cup egg whites
Strawberry Swirl Ingredients:
- 1 cup strawberries if out of season use frozen
- 2 tablespoons powdered sugar
- splash of lemon juice
Instructions
- Preheat the oven to 350 degrees and line a 9 by 13 casserole dish with parchment paper.
- Combine crushed graham crackers and butter until combined and the consistency of damp sand. (If you have one, use a food processor to crush and combine these ingredients, then wash out and use it again to combine the cake ingredients.)
- Dump the crumbs in the bottom of your casserole dish or spring form pan and press down with a rubber spatula or your fingers until it’s tightly packed and in an even layer.
- Bake the crust for 10 minutes then remove from the oven to cool completely.
- Combine the cake ingredients in a food processor or in a large bowl with a rubber spatula, do not whip you don’t want to add air, you want it smooth. Let the cake mixture set for 10 minutes after combined to settle and allow any air bubbles pop.
- While the cake mixture sets, you can add all the strawberry swirl ingredients to a blender and mix until all the berries are broken down into a liquid.
- Add the cheesecake mixture to the casserole dish, use a rubber spatula to spread and even out. Drizzle the strawberry sauce over the top and use the spatula to swirl around.
- Bake in the oven for 20-30 minutes, until the center just starts to firm up and the sides pull away. Let the cake cool on your counter top before moving to the fridge to chill.
- Once the cake is chilled through and firm you can cut it. Grip both sides of the parchment paper and slide the cake out, if using a spring form pan release and gently remove the sides.
- Use a large sharp knife to cut into 15 large bars and serve.

These Italian cookies are a delicious low calorie dessert recipe! I love dunking them in my afternoon coffee, and the way baking them makes my house smell!
You can make these gluten free by swapping in Bob’s 1×1 Gluten Free Baking Flour.


Cherry Almond Biscotti
Equipment
Ingredients
- 1 cup flour
- ¼ cup chopped almonds
- ¾ tsp Baking powder
- ¼ tsp salt
- ⅓ cup sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tsp almond extract
- 1 teaspoon lemon juice
- 2 teaspoon water
- ⅓ cup dried cherries
Instructions
- Preheat oven to 350 and cover a cookie sheet with parchment paper.
- In a medium bowl combine flour, almonds, baking powder and salt. Set aside.
- In a standing mixer or with a handheld mixer whisk the egg and sugar on medium until thick and pale about 5 minutes. Reduce to low and add in vanilla, almond extract water and lemon juice. Then add in (slowly) the flour mixture, then the cherries and move to the cookie sheet.
- With your hands (get them wet so the dough doesn’t stick) mold into a rectangle, think a piece of paper folded in half length wise. Bake until slightly browned around the edges, about 20 minutes.
- Remove from oven and let cool on baking tray for 10 minutes, but leave the oven on we are not done with it. Move the large cookie to a cutting board, remove parchment carefully from bottom.
- Slice into 1/3 inch cookies lengthwise and place back on tray cut sides up. Bake for 5 minutes, flip over and bake for another 5-8 minutes.
- As they cool they will crisp up more, but they are divine right out of the oven slightly soft inside with a crisp exterior.

- 1 banana
- ⅛ cup dark chocolate chips
- 1 tsp olive oil or coconut oil
Instructions
- Cover a plate with parchment paper.
- Slice banana into 20 bite size pieces, place spread out on the plate.
- Put the chocolate chips and oil in a microwave safe bowl or coffee cup and heat in 10 second intervals stirring in between each time until it is a silky smooth chocolate pool.
- Pour the chocolate over the banana bites, place in the freezer until set, about 1 hour.
- Move to a freezer bag for better storage.

This low calorie dessert has the trifecta: Chocolate, cherries, and coffee. You’re going to need a low calorie desert recipe like this in your life.


Black Forest Cupcakes
Equipment
- 2 Cupcake pans
Ingredients
Cupcake Ingredients
- 1 ½ cup Self Rising flour
- ⅓ cup chopped dried cherries
- ⅓ cup cocoa powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsweetened apple sauce
- ½ cup Almond milk
- 2 tablespoon Strong Black Coffee
- 3 large eggs
- ¼ cup light brown sugar
- ½ cup sugar
Chocolate Glaze Ingredients
- ½ cup dark chocolate chips
- 2 tablespoons strong black coffee
- 2 tablespoons honey
Instructions
- Preheat oven to 350, line 2 cupcake pans with 18 cupcake liners, or use cooking spray.
- In a medium bowl combine the flour, cocoa powder, cherries, salt and baking soda and set aside.
- In a standing mixer or large bowl whisk the eggs and sugars until pale and fluffy, about 5 minutes. Then add apple sauce and whisk, then the dry ingredients mix until just combined. Finally add the almond milk and coffee and whisk until smooth.
- Using an ice cream scoop pour the batter into cupcake liners, if you have any empty spots left in your cupcake pan just add a little water to each it doesn’t burn your tray. Place in oven for 20-25 minutes, you can tell they are done if you stick a tooth pick or uncooked piece of spaghetti into the cupcake and it comes out clean. Remove from oven and allow to cool while you get on with the icing.
- The icing is super easy, get a double boiler going (see below for directions for a double boiler) add all the icing ingredients and stir occasionally to help it along, once it has thickened it is done about 5-10 minutes.
- While this is thickening take your toothpick or piece of uncooked spaghetti and poke the cupcakes several times, this way when you apply the icing it will seep down into the cakes… YUM!
- Turn off the heat on the water but leave the bowl on the boiler, dip each cupcake into the icing (be very careful it is HOT!) and place on a cooling rack, wait 15 minutes before serving.

Raspberry Angel Food Cake with Raspberry Amaretto Sauce
This low calorie dessert recipe comes from a family member, Beverly Jo Noble. Bev (as we call her) released a cookbook years ago (A Lifetime of Recipes), and allowed me to share are low calorie dessert recipe!
Recipes for low calorie desserts can come in many shapes and sizes… I’m pleased to tell you this one comes with a bit of booze, mostly just for flavor, but we’ll take it!


Raspberry Angel Food Cake with Raspberry Amaretto Sauce
Equipment
- Cake pan
Ingredients
Raspberry Amaretto Sauce Ingredients
- 2 cups raspberries
- ½ cup powdered sugar
- 1 tablespoon lemon juice
- 4 tablespoons amaretto
Raspberry Angel Food Cake Ingredients
- 10 egg whites at room temperature
- 1 ¼ teaspoon cream of tartar
- ¼ teaspoon salt
- 1 teaspoon vanilla
- ½ teaspoon almond extract
- 1 ¼ cups sugar
- 1 cup flour cake flour is best
- 1 cup raspberries rinsed and drained
Instructions
- Make the Raspberry Amaretto Sauce: Rinse raspberries. Place in blender with remaining ingredients and puree until smooth. Pour through fine sieve to remove seeds. Set aside
- Preheat oven to 325⁰. Beat egg white, cream of tartar, and salt with an electric mixer until they form soft peaks. Continue to beat while adding the vanilla and almond extracts, followed by the sugar. Add sugar a little at a time. Continue to beat until peaks are stiff and shiny. Remove bowl from mixer. Sift flour over the top of the eggs, then sprinkle with raspberries. Gently fold into egg whites with a rubber spatula.
- Spoon into ungreased tube pan and bake 40 minutes, until a wood pick inserted near the center comes out clean. Invert onto a wire rack. Cook completely, then invert and use spatula to loosen cake from pan.
- Place serving plate upside down on top of cake pan. Hold firmly and turn over. Pull pan straight up, then remove tube insert. Slice cake and pour Raspberry Amaretto Sauce over each piece.

Rocky Mountain Brownies
Ingredients
- 1 cup Semi Sweet Chocolate Chips- Dark Chocolate Chips
- 1 cup Flour
- ¾ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ⅛ teaspoon salt
- ¼ cup unsalted butter at room temperature
- ¾ cup dark brown sugar
- 2 large eggs
- ⅓ cup Greek yogurt
- 2 tbsp white chocolate chips
- ¼ cup walnuts
Instructions
- Preheat oven to 350 and lightly coat a 9 by 9 square casserole dish with cooking spray.
- In a microwave safe bowl heat the chocolate chips in the microwave in 10 second increments stir in between each 10 second increment until all melted. Then scrape into your standing mixer (or large bowl w/ rubber spatula), and set aside until slightly cooled. Then add to the chocolate the butter and brown sugar and with the paddle attachment mix together. One at a time add the eggs then the yogurt.
- In a medium bowl combine flour, baking soda, cocoa powder and salt and whisk together. Alternate adding the flour mixture and 1/3 cup water, starting and ending with the flour mixture and just until combined.
- Use a rubber spatula to scrape into casserole dish then top with walnuts and white chocolate chips. I like to get creative and push some of the nuts into the batter, have fun with this part 🙂
- Place in the oven for 30-40 minutes, you know they are done when the sides pull away from pan and the center resists pressure. Now remove from oven and resist touching it for 1-2 hours then slice into 12 squares and devourer.

- 2 cups organic flour
- ¾ teaspoon baking soda

- ¼ cup Almond milk

- 3 tablespoon unsalted butter at room temp
- ¾ cup sugar
- 2 large eggs
- 1 ½ cup pineapple finely chopped
- ⅛ cup white chocolate chips
- ½ teaspoon olive oil
Instructions
- Pre heat oven to 350 and line 2 mini muffin pans with paper liners.
- In a large bowl combine flour, salt and baking soda, set aside.
- In a small bowl combine almond milk and vanilla, set aside.
- In a large bowl or standing mixer whisk butter and sugar, add eggs one at a time on low until combined. Add ⅓ of the flour and mix, add ⅓ of the almond milk, repeat until everything is incorporated, end with the flour.
- Gently fold in the pineapple and spoon into the paper liners ¾ full, bake in oven for 12-15 minutes until lightly golden. Remove cupcakes to cooling rack for 30 minutes.
- When the cupcakes are cooled place the chocolate chips into a microwave safe bowl, microwave in 10 second increments stirring in between each until melted, remove from microwave and immediately add oil and mix well.
- Drizzle over the tops of the cupcakes, the chocolate is super sweet and creamy so a little goes a long way. Let the chocolate harden, about 20 minutes before serving.

- ¾ cup Greek yogurt
- ½ cup unsweetened apple sauce
- ½ cup Almond milk
- 3 large eggs
- ¾ cup sugar
Instructions
- Preheat oven to 350, lightly coat 3 Cupcake Pans with cooking spray or muffin liners/cups, also coat the muffin liners with cooking spray.
- In a medium bowl combine the flour, berries, salt and baking soda mix well and set aside. In another medium bowl combine the Greek yogurt, apple sauce and almond milk and whisk, set aside.
- In a standing mixer or large bowl whisk the eggs and sugar until pale and fluffy, about 5 minutes. Then alternate adding the flour mixture and the liquid mixture in 3 steps beginning and ending with the flour. Don’t over mix it will get tough you just want well combined.

Pineapple Upside-Down Cupcakes
Equipment
Ingredients
- 3 Eggs
- 1 ½ cup Almond milk
- ½ cup melted butter
- 2 teaspoon vanilla extract
- 1 cup unsweetened apple sauce
- 1 cup sugar
- 3 cups flour
- 3 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 tablespoons dark brown sugar
- ½ fresh pineapple thinly sliced
- 30 pitted cherries
Instructions
- Preheat oven to 350 and spray 2-3 cupcake pans with baking spray.
- In a large bowl combine eggs, almond milk, melted butter (make sure it has cooled first) vanilla and apple sauce. Mix well. Then add in the flour, sugar (save the brown sugar for later), baking powder, baking soda and salt. Mix together and set aside.
- Sprinkle the brown sugar on the bottoms of all the cupcake molds, then add in the pineapple and a cherry, then fill up 1/2 way with the cupcake batter. Do this for all 30 cupcakes then bake for 12-15 minutes. You know they are done when you insert a toothpick and it comes out clean.
- Let cool in the cupcake molds for 10 minutes, then using a butter knife scrape around the sides of the cupcakes and gently lift out, place upside-down on a cooling rack for another 5 minutes and serve.

Chocolate Covered Strawberry Bites
Ingredients
- 4 large strawberries
- ⅛ cup dark chocolate chips
- ½ teaspoon olive oil or coconut oil
Instructions
- Cover a plate or cookie sheet with parchment paper. Slice the stems and tips off and discard , slice the strawberries into 3 discs and place on the parchment paper leaving room between each for chocolate runoff.
- Use a double boiler to melt the chocolate, place a small sauce pan on your stove top and add about 1 cup of water to the pan. Add a glass, heat safe bowl to the top of the pan so that it sits slightly inside and the water but does not touch the water, just the steam. If need be remove some water. Add the chocolate to the bowl and continuously stir the chocolate while you bring the water in the pan to a boil. Once the chocolate is melted add the oil and remove from heat.
- You can also melt the chocolate in your microwave. In a microwave safe bowl heat the chocolate chips in 10 second intervals, stir in between each 10 second round until chocolate is runny. Remove from microwave and add the oil stir well.
- Drizzle the chocolate over the strawberries, place in fridge for 20 minutes before serving.
