This healthy strawberry shortcake shooters recipe is no cook and packed with good for you ingredients like metabolism boosting strawberries, almond flour and almond whipped cream. But don’t worry if you can’t have almonds, I have supplied modifications too!


Strawberry shortcake is my daughter’s all-time favorite dessert. So I created this low calorie healthy version that is done in no-time, requires no cooking, and is healthy enough to serve every night. I can feel good about serving her this healthy version, and I get to have some too!

I am a big fan of both almond flour and almond whipped cream (you’ll find it by the whipped cream or in the organic refrigerated section). But I know some readers can’t have almonds.
If you can’t have or don’t like almonds, you can swap out the almond flour for oat flour or crumble up a store-bought or Low Calorie Graham Cracker in it’s place (skip the sugar if you use a graham cracker).
And you can get coconut whipped cream (will be next to the almond whipped cream) or fat free whipped cream in place of the almond whipped cream.

How to Make Healthy Strawberry Shortcake in a Cup
So easy, so quick, these healthy strawberry shortcake shooters are the best sweet treat!
You will want to serve them right away as the whipped cream will deflate after a while. But you can chop the strawberries and make the crumble ahead of time if you want to prep these healthy strawberry shortcake cups ahead of time.


How to Make Low Calorie Strawberry Shortcake Shooters:
- In a medium bowl combine the almond flour, coconut oil, powdered sugar and vanilla extract. Mix together until it resembles wet sand.
- Add 1 tablespoons of the almond flour mixture to the bottom of two cups.
- Top each with 2 tablespoons whipped cream.
- Add a layer of 2 tablespoons of strawberries to each cup.
- Add the remaining whipped cream to each cup (2 tablespoons each cup).
- Top with the remaining almond flour mixture, and the remaining strawberries.
- Serve immediately.

- 1 tablespoons All-Natural Zero Calorie Powdered Sugar or regular powdered sugar
