This healthy strawberry shortcake recipe is no cook and packed with good for you ingredients like metabolism boosting strawberries, almond flour and almond whipped cream. But don’t worry if you can’t have almonds, I have supplied modifications too!

Ingredients You’ll Need:

  • ⅓ cup almond flour
  • 2 teaspoons melted coconut oil
  • 1 tablespoons All-Natural Zero Calorie Powdered Sugar (see recipe card)
  • ½ teaspoon vanilla extract
  • ½ cup chopped strawberries
  • ½ cup Almond Milk Whipped Cream (or coconut whipped cream)

No baking is needed to make these healthy strawberry shortcakes in cups, it's a 5 minute recipe that you can enjoy guilt free anytime!
Special Tip: If you can't have almond flour, swap it out for oat flour. Or one graham crackers crumbled. These will change the calories, but it will still be a healthy treat.

  • In a medium bowl combine the almond flour, coconut oil, powdered sugar and vanilla extract. Mix together until it resembles wet sand.
  • Add 1 tablespoons of the almond flour mixture to the bottom of two cups.
  • Top each with 2 tablespoons whipped cream.
  • Add a layer of 2 tablespoons of strawberries to each cup.
  • Add the remaining whipped cream to each cup (2 tablespoons each cup).
  • Top with the remaining almond flour mixture, and the remaining strawberries.
  • Serve immediately.
