- Grape tomatoes
- Cucumber

- Kalamata or black olives

- Red wine vinegar
- Dijon mustard
- Oregano

- Make the pasta ahead of time, and place in the container you plan on serving the pasta salad in. Cover and chill until you’re ready to make the homemade pasta salad recipe.
- Add all the greek pasta salad dressing to a jar, cover, shake, and place in the fridge. Save space and place the jar of dressing atop the pasta and close it all up together.
- Get pre-sliced olives, they cost the same but you end up getting more in the jar! Saves you time AND money!

- Cook pasta according to package instructions to al dente.
- Meanwhile, add all of the Greek Pasta Salad Dressing ingredients together in a bowl or jar. Whisk or (if using a jar) cover and shake well.
- Drain the pasta, rinse with cold water and set aside to cool completely.
- Add the pasta to a large bowl, add tomatoes, cucumber, olives and 1/2 the feta cheese.
- Pour dressing over and toss together until everything is coated in dressing.
- Top with remaining feta cheese, cover and chill at least 30 -60 minutes before serving.
- Add 2 tablespoons of water and toss together again before serving (the pasta will have soaked up the dressing).

Ingredients
Greek Pasta Salad Ingredients:
- 1 12 oz box tri-color rotini pasta (or gluten free)
- 1 pint grape tomatoes halved
- 2 cups cucumber sliced
- 1 cup cubed feta cheese
- 1 cup kalamata or black olives pitted and halved
Greek Pasta Salad Dressing:
- 2 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 1/4 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1 garlic clove minced
- 1/4 cup vegetable broth
- 1 teaspoon red pepper flakes (optional)
