  2. Meanwhile, add all of the Greek Pasta Salad Dressing ingredients together in a bowl or jar. Whisk or (if using a jar) cover and shake well.
  3. Drain the pasta, rinse with cold water and set aside to cool completely.
  4. Add the pasta to a large bowl, add tomatoes, cucumber, olives and 1/2 the feta cheese.
  5. Pour dressing over and toss together until everything is coated in dressing.
  6. Top with remaining feta cheese, cover and chill at least 30 -60 minutes before serving.
  7. Add 2 tablespoons of water and toss together again before serving (the pasta will have soaked up the dressing).

Greek Pasta Salad Ingredients:

  • 1 12 oz box tri-color rotini pasta (or gluten free)
  • 1 pint grape tomatoes halved
  • 2 cups cucumber sliced
  • 1 cup cubed feta cheese
  • 1 cup kalamata or black olives pitted and halved

Greek Pasta Salad Dressing:

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 garlic clove minced
  • 1/4 cup vegetable broth
  • 1 teaspoon red pepper flakes (optional)
