  5. Pour dressing over and toss together until everything is coated in dressing.
  6. Top with remaining feta cheese, cover and chill at least 30 -60 minutes before serving.
  7. Add 2 tablespoons of water and toss together again before serving (the pasta will have soaked up the dressing).

  • 1 12 oz box tri-color rotini pasta (or gluten free)
  • 1 pint grape tomatoes halved
  • 2 cups cucumber sliced
  • 1 cup cubed feta cheese
  • 1 cup kalamata or black olives pitted and halved

Greek Pasta Salad Dressing:

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • ¼ teaspoon Dijon mustard
  • ½ teaspoon dried oregano
  • teaspoon salt
  • teaspoon pepper
  • 1 garlic clove minced
  • ¼ cup vegetable broth
