  1. In a medium bowl, add the eggs, egg whites, yogurt, salt and pepper and whisk until smooth.
  2. Heat a medium pan over medium-low heat and spray with olive oil.
  3. Pour the egg mixture into the pan.
  4. Using a rubber spatula, gently pull the eggs to the center of the pan as the bottom starts to set, just until the eggs are set.
  5. Remove the pan from the heat and immediately move the eggs to 2 plates.
  6. Serve hot.
