Low Calorie Pop Tarts

These Low Calorie Pop Tarts are just 117 calories and so fun to make! I like to make these healthy pop tarts on the weekend, even though they are quick to bake, it’s such a fun activity for weekend mornings.

I made these with my Low Calorie Strawberry Jam in the centers, but gave directions to make any flavor healthy pop tart you like in the recipe card below.

And I even found all-natural rainbow sprinkles. I use these in all my baking and they come in a BIG tub so you can start using them on your favorite cookies, in pancakes (my kiddo’s favorite) and atop cakes and ice cream. I supplied a link in the recipe card so you can see the brand I like.

One of my favorite things about this recipe, is that I always have all of the ingredients on hand. I always have greek yogurt and self-rising flour. And a bag of frozen strawberries is all I really need to make the filling.

A note on the flour, all-purpose flour will not work here! You want self rising flour, otherwise the dough will not rise and the pop tarts will come out hard.

How to Make Healthy Pop Tarts

These pop tarts are easy and fun, and kid friendly to make! My daughter likes to cut them out (and you use a pizza cutter so it’s safer) and fill them. I have even taught her how to use the fork to close the tarts up. She loves getting involved in the kitchen.

How To Make Healthy Pop Tarts:

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large mixing bowl combine 1 cup Greek yogurt and the self rising flour. Mix until it comes together as a dough.
  3. Roll up into a ball, then move to a clean floured surface. Add a little more flour to the top of the dough and roll out into a large rectangle (about 13 inches by 6 inches).
  4. Use a pizza cutter to slice once length-ways, and 7 times the other way, to form 16 rectangles.
  5. Place 1/2 of the rectangles on the prepared baking sheet, and add 1 tablespoon of the homemade strawberry jam to the center of each.
  6. Place the remaining rectangles atop of the strawberry jam filled ones. Use a fork to press all around each to close and leave a pretty pattern.
  7. Bake for 15-20 minutes until golden browns then move to a cooling rack.
  8. While the pop tarts cool completely, make the glaze: Add 2 tablespoons of the yogurt and the homemade jam to a medium bowl and mix together. Once the pop tarts are completely cooled (very important) drizzle with glaze and add the sprinkles (if using).

Special Tip: You can make these any flavor you like. If you want cherry pop tarts use unsweetened cherry jam, or for peach, unsweetened peach jam. If there is a jam, you can flavor these pop tarts that flavor!
