These Low Calorie Pop Tarts are just 117 calories and packed with flavor! Best of all they have just 1.7g of sugar and are as delicious as they are beautiful. I even found some all-natural sprinkles you can add to the tops, and supply you with my super easy low calorie strawberry jam to add to the centers.Special Tip: You can make these any flavor you like. If you want cherry pop tarts use unsweetened cherry jam, or for peach, unsweetened peach jam. If there is a jam, you can flavor these pop tarts that flavor!
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a large mixing bowl combine 1 cup Greek yogurt and the self rising flour. Mix until it comes together as a dough.
Roll up into a ball, then move to a clean floured surface. Add a little more flour to the top of the dough and roll out into a large rectangle (about 13 inches by 6 inches).
Use a pizza cutter to slice once length-ways, and 7 times the other way, to form 16 rectangles.
Place 1/2 of the rectangles on the prepared baking sheet, and add 1 tablespoon of the homemade strawberry jam to the center of each.
Place the remaining rectangles atop of the strawberry jam filled ones. Use a fork to press all around each to close and leave a pretty pattern.
Bake for 15-20 minutes until golden browns then move to a cooling rack.
While the pop tarts cool completely, make the glaze: Add 2 tablespoons of the yogurt and the homemade jam to a medium bowl and mix together. Once the pop tarts are completely cooled (very important) drizzle with glaze and add the sprinkles (if using).
