  • ½ cup 0% Greek yogurt
  • 1 egg
  • 1 teaspoon honey or maple syrup
  • Zest of 1 lemon optional
  • 4 slices Low Calorie Bread
  • ⅓ cup berries choose your favorite
  • 1 teaspoon powdered sugar optional

Healthy Yogurt Toast Meal Prep and Storage

Meal Prep: You can make the healthy recipe ahead of time and bake completely then cover and store for later. You can also store unbaked just cover well, and store for later.
Storage: Will hold for 6 days in the fridge baked, or 2 days unbaked. Or one month in the freezer (baked or unbaked).
Reheating: You can reheat (or if stored unbaked follow directions below to bake) in an oven at 200-250 degrees until warmed through.

I like to use homemade low calorie bread, but if you prefer to purchase you bread, I have included a low calorie option above that will have the same nutritional value as the homemade.
Special Tip: You can use any berries you like, but fresh is best for this recipe.

Equipment

Ingredients
 
 

  • ½ cup 0% Greek yogurt
  • 1 egg
  • 1 teaspoon honey or maple syrup
  • Zest of 1 lemon optional
  • 4 slices Low Calorie Bread
  • cup berries choose your favorite
  • 1 teaspoon powdered sugar optional

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a medium bowl combine the greek yogurt, egg, honey an lemon zest (if using). Mix well and set aside.
  • Lay the slices of bread on a baking sheet and press the middle of the bread down to squish all but the crust and edges, making a well for the custard.
  • Scoop the greek yogurt and egg custard into the well of each slice of bread.
  • Add to the oven and bake for 8-12 minutes until the custard is set.
  • Remove from the oven, top with berries and powdered sugar (if using) and serve hot.
