This Low Calorie Bread Pudding is just 115 calories, and I boosted the protein with a low calorie salted caramel apple glaze! So you’ll get 7.1g of protein per serving. I did supply a low calorie bread recipe, but this can be made with any bread on hand, including leftover rolls and bread from holiday gatherings.

Everything You’ll Need

  • 6 slices Low Calorie Bread (or any bread, including leftover holiday rolls)
  • 1 apple
  • 4 eggs
  • 2 cups unsweetened almond milk
  • ½ cup All-Natural Zero Calorie Brown Sugar (or sugar, honey, maple syrup)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon chopped pecans
  • 2 scoops Salted Caramel Protein Powder (or vanilla)
  • ⅓ cup Low Calorie Apple Cider (or store-bought)

Healthy Bread Pudding Meal Prep and Storage

  • Individual Portions– Cook the bread pudding as directed, let cool completely, and cut into 12 portions. Scoop into meal prep containers and cover. Refrigerate for 4-5 days or freeze for 1 month. To reheat, microwave 2 minutes from defrosted, or 4-5 minutes from frozen. Or bake (defrost first) at 350 degrees for 20 minutes. 
  • Family Portion– Bake the bread pudding as directed. Cool completely, then cover with plastic wrap and place in the fridge for up to a week or the freezer (I also like to put in a 2 gallon freezer bag to freeze) for a month.
  • Leftovers– Scoop into individual servings meal prep containers, freeze for up to a month or refrigerate for 4-5 days. To reheat, microwave 2 minutes from defrosted, or 4-5 minutes from frozen. Or bake (defrost first) at 350 degrees for 20 minutes.

Protein Salted Caramel Apple Glaze:

Instructions
 

  • Preheat oven to 350 degrees.
  • Chop or rip the bread into small pieces, adding to an 8-inch square baking dish as you work. Mix in the apple.
  • In a bowl whisk the eggs, almond milk, sugar, cinnamon, and vanilla extract.
  • Pour over bread and lightly push down with a fork until bread is covered and soaking up egg mixture.
  • Bring a kettle of water to a boil. Place bread pudding baking dish into a large roasting pan. Carefully pour boiling water around pan.
  • Bake for 45 minutes, until a knife inserted into the middle comes out mostly clean.
  • Meanwhile, mix the glaze together adding more liquid 1 tablespoon at a time as needed until it drizzles off your spoon.
  • Remove from oven and sprinkle the top with pecans.
  • Serve slices of healthy bread pudding with the caramel apple glaze poured over each slice.
