Ingredients You’ll Need:

  • ¼ cup coconut oil or unsalted butter at room temperature
  • ¾ cup All-Natural Zero Calorie Brown Sugar or dark brown sugar
  • ½ cup Sugar Free Chocolate Chips or semi sweet chocolate chips
  • ½ cup 0% Greek yogurt
  • 1 cup unsweetened almond milk or your favorite milk
  • 2 large eggs
  • 1 cup all-purpose flour or gluten free flour
  • ⅓ cup Chocolate Protein Powder
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt

Healthy Protein Brownies Meal Prep and Storage

Meal Prep: You can easily meal prep these! Simply wrap individual portions in parchment paper, and stack in a gallon freezer bag or container.
Storage: Will hold in the fridge for 5 days and in the freezer for a month.
Reheating: You can add the wrapped servings to the microwave for 1-2 minutes. Or pop in a toaster/toaster oven for a couple minutes.

  • Preheat oven to 350 and line a 9×13 casserole dish with parchment paper.
  • In a large sauce pan add the coconut oil, brown sugar, and chocolate and heat on low until melted. Mixing often.
  • Once melted, remove from heat and add in the greek yogurt and almond milk. Test to see if the mixture is cooled, and if so proceed. If not let it sit for 5 minutes before adding in eggs.
  • Add the eggs and mix until incorporated.
  • To the wet ingredients, add the flour, protein powder, cocoa powder, baking soda and salt. Mix together until just combinded, it will be thick.
  • Add the brownie mix to the preparied cassarole dish, and smooth to an even layer.
  • Place in the oven for 20 minutes, you know they are done when the sides pull away from pan and the center resists pressure.
  • Let cool for 1 hour before cutting into 16 squares.
