I used my homemade pie crust recipe to make this healthy strawberry galette extra low in calories, but I did supply notes on which ones to buy at the store if you prefer to skip that step.


This easy take on a strawberry pie is fun to make and impressive to serve.
And it’s so easy you can make this with your kids, they love to mix the berries and fold over the crust. And this recipe is so foolproof they really can’t hurt it!

You will need fresh strawberries to make this recipe, frozen unfortunately won’t cut it.
And if you can’t have or don’t like cornstarch, you can replace it with flour or xanthan gum.

How to Make Healthy Strawberry Galette
This easy to make strawberry galette is a great way to get all the flavors of strawberry pie, without all the work!
If the crust breaks while you are filling or folding it. just use your fingers to pinch it back together.


How to Make Healthy Strawberry Galettes:
- Preheat the oven to 400 degrees
- To a large bowl combine the sliced strawberries, vanilla extract, cornstarch, sugar and lemon zest. Mix well to combine and then set aside while you make the Low Calorie Pie Crust.
- Assemble the low calorie pie crust and roll out onto a large piece of parchment paper.
- Move the parchment paper with the dough to a baking sheet.
- Use a slotted spoon to scoop the strawberries into the center of the dough, making sure to leave any excess liquid in the bowl.
- Spread the strawberries out a little so that the center of the dough is covered in strawberries. With 1 inch of dough left untouched around the edges.
- With wet hands (so the dough doesn’t stick) fold the dough over the strawberries (see photo).
- In a small bowl, whisk the egg, then brush the egg over the crust.
- Bake for 25-30 minutes until golden brown.
- Use a pizza cutter or sharp knife to slice into 8 slices and serve.
