Healthy Strawberry Spinach Salad with Chicken Meal Prep and Storage

Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Ingredients
 
 

Strawberry Salad with Chicken:

  • 4 cups baby spinach
  • 1 cup strawberries sliced
  • ¼ cup chopped walnuts
  • 1 cup precooked shredded chicken
  • 3 tablespoons crumbled blue cheese

Homemade Balsamic Vinaigrette:

  • cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ½ tablespoon honey or maple syrup
  • ¼ cup vegetable broth
  • 1 garlic clove minced
  • teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil

Instructions
 

  • Make the balsamic vinaigrette ahead of time, combine all the ingredients in bowl and whisk. Set aside to marinate.
  • Add the baby spinach, 1/2 the strawberries, 1/2 the walnuts, and the chicken to a large bowl. Toss to combine.
  • Pour the balsamic vinaigrette over the salad and toss well
  • Top the salad with remaining strawberries, walnuts, chicken and the cheese and serve.
  • Note- You can also plate the 4 servings, then top them with the remaining ingredients.
