Question: What is a Wedge Salad?
Answer: A wedge salad is a traditional steakhouse salad that consists of iceberg, bacon, tomatoes and blue cheese. It is most often made with iceberg lettuce, though you could make the iceberg wedge recipe with a romaine heart, halved. Some recipes will also include onions, and we added the low calorie ingredient to boost the flavor.

How to Make a Wedge Salad
Making a wedge salad with blue cheese is easy and impressive. Try this for a homemade date night, or enjoy it as a yummy lunch!
At just 138 calories, you can enjoy all 4 servings for just 552 calories! And should you choose to eat the entire head of lettuce, you’ll be having nearly 50g of protein! This steakhouse wedge salad makes a wonderful meal if you don’t want it as a side dish.
Meal Prep Tips: This easy wedge salad recipe can be prepped ahead of time! Precook and crumble the bacon, make the dressing ahead of time (it’s better on day 2!) and slice the veggies. Then all you need to do is assemble and you’ll be eating in less than 5 minutes.
How to Make Iceberg Wedge Salad Recipes:
- In a skillet over medium heat, cook the bacon to desired doneness (approximately 5 minutes each side). Drain to a paper towel and once cooled, crumble.
- Meanwhile, to a medium bowl, combine the wedge salad dressing ingredients, and mix well. If you like a thinner dressing, add 1 tablespoon of water at a time until you have reached your desired consistency.
- Remove the outer leaves of the lettuce, then chop the head of lettuce in half and then half again, making 4 wedges.
- Cut off the ends to remove the stem.
- Add the wedges to plates and top with the blue cheese wedge salad dressing.
- Sprinkle over bacon crumbles, tomato, and onion, and serve cold.

Low Calorie Classic Wedge Salad Recipe
Ingredients
Wedge Salad Ingredients:
- 2 slices bacon
- 1 head iceberg lettuce
- 1 cup cherry tomatoes halved
- ¼ red onion diced
Wedge Salad Dressing:
- 4 green onions thinly sliced
- 1 cup 0% Greek yogurt
- ¼ cup crumbled blue cheese
- ¼ teaspoon pepper
Instructions
