Ingredients in Low Calorie Rice Pudding
I like to use unsweetened almond milk, and my favorite all-natural brown sugar substitute to make this sugar free rice pudding.
But you can use any milk you like, and any brown (or white) sugar you prefer. It’s even great with coconut sugar!


Shopping list for Low Calorie (Sugar Free) Rice Pudding:
- Uncooked rice long grain white or brown (not instant)
- Egg
- Unsweetened almond milk divided
- Salt
- All-Natural Zero Calorie Brown Sugar (see recipe card below)
- Vanilla extract
- Ground cinnamon
- Dried cranberries (optional)
How to Make Low Calorie Rice Pudding
This sugar free rice pudding is easy and fun to make. I like to serve it hot, but if you prefer it cold or room temperature that works too!
And if you don’t like, or can’t have cinnamon, you can skip it or substitute it for nutmeg.


How to Make Low Calorie (Sugar Free) Rice Pudding:
- To a medium saucepan, combine the water and rice.
- Bring to a boil over high heat.
- Reduce heat to medium low, cover, and simmer 35-40 minutes, until tender.
- Move the rice to a large sauce pan, and add in 1 1/2 cups of the milk, brown sugar, and salt. Mix together.
- Cook over medium heat for 15-20 minutes, until it thickened.
- Add remaining 1/2 cup of milk, and beaten egg, and mix until well combined.
- Cook for another 2 minutes, stirring constantly. Then remove the pot from the heat and stir in vanilla extract.
- Sprinkle with cinnamon, and dried cranberries (if desired)
- Serve warm.
