Ingredients You’ll Need:

  • 1 ½ cups water
  • ¾ cup uncooked rice long grain white or brown (not instant)
  • 1 egg beaten
  • 2 cups unsweetened almond milk
  • ¼ teaspoon salt
  • ⅓ cup All-Natural Zero Calorie Brown Sugar (see recipe card below)
  • 1 teaspoon vanilla extract
  • 3 teaspoons ground cinnamon
  • ¼ cup dried cranberries (optional)

Meal Prep: This is a great meal prep recipe! You will want to chill the dish, so go ahead and make it a day or two before you plan on serving. Then store in an airtight container in the fridge.
Storage: Will hold for 4-5 days in the fridge. Freezer storage is not recommended.

This Low Calorie Rice Pudding is just 108 calories for 1/2 cup and is packed with flavor. I know you'll love it!
I like to add dried cranberries, but you can swap them for traditional raisins, or skip them all together.
Special Tip: This recipe is so versatile, use the sugar you like and the milk you like, or what you have on hand. It might change the calories a bit, but it will still come out great!

Ingredients
 
 

  • 1 ½ cups water
  • ¾ cup uncooked rice long grain white or brown (not instant)
  • 1 egg beaten
  • 2 cups unsweetened almond milk divided
  • ¼ teaspoon salt
  • cup All-Natural Zero Calorie Brown Sugar
  • 1 teaspoon vanilla extract
  • 3 teaspoons ground cinnamon
  • ¼ cup dried cranberries (optional)

Instructions
 

  • To a medium saucepan, combine the water and rice.
  • Bring to a boil over high heat.
  • Reduce heat to medium low, cover, and simmer 35-40 minutes, until tender.
  • Move the rice to a large sauce pan, and add in 1 1/2 cups of the milk, brown sugar, and salt. Mix together.
  • Cook over medium heat for 15-20 minutes, until it thickened.
  • Add remaining 1/2 cup of milk, and beaten egg, and mix until well combined.
  • Cook for another 2 minutes, stirring constantly. Then remove the pot from the heat and stir in vanilla extract.
  • Sprinkle with cinnamon, and dried cranberries (if desired)
  • Serve warm.
