How to Make Turkey Meatloaf:

  1. Preheat the oven to 350 degrees F.
  2. Oil a loaf pan, baking sheet or muffin tins with 1 teaspoon of olive oil, or olive oil baking spray.
  3. In a large skillet, heat a teaspoon of olive oil over medium-high heat. Add the onion and bell pepper and sauté for 5 to 10 minutes, until soft. Add the garlic and continue to sauté, for 1 to 2 minutes, or until soft. Set aside.
  4. In a large bowl , add the cooled onion mixture and the remaining ingredients except for 1/4 cup of the BBQ sauce. Mix with your hands until just combined (over mixing will make a tough meat loaf).
  5. Transfer the meat mixture to the loaf pan and shape it into a loaf. If you’re using a baking sheet, mold the meat loaf into a log shape. And if you’re using muffin tins, fill 2/3 full. Top with the remaining BBQ sauce.
  6. Bake for 1 hour for a loaf, or 45 minutes for mini meatloaf turkey, or until the internal temperature is 165 degrees F. Let the turkey meat loaf rest for 10 minutes, then cut it into eight slices and serve.

What makes this turkey meatloaf best, is the barbecue sauce you add to the meat before you mix. It adds a ton of flavor, and makes the turkey meat loaf darker… closer to the color of ground beef.
