Healthy Meatloaf Meal Prep and Storage

Meal Prep

  • Prep – Mix the meatloaf and add to a loaf pan or baking dish.
  • Cover – Cover with plastic wrap, or a casserole lid.
  • Refrigerate or Freeze – Will hold for 4 days in the fridge. And in the freezer for 1 month. 
  • Cook – Defrost overnight in the fridge if frozen. Uncover and cook as directed below (you can print out the recipe card and tape it to the top).

Leftover Storage

  • Cook – Cook as directed below, rest and slice.
  • Individual or Family Servings – Add one slice to a container for single serve. Or as many servings as you need for the full family for family servings. Cover and store for later. 
  • Refrigerate or Freeze – Will hold for 4 days in the fridge. And in the freezer for 1 month. 
  • Reheat – Defrost in the fridge if frozen. Bake in a 350 degree oven for 20 minutes, or the microwave for 3 minutes.

You can use this meatloaf turkey recipe to make mini meatloaves as well as a turkey meat loaf.

Ingredients
 
 

  • 2 teaspoons olive oil
  • 1 whole onion finely chopped
  • 1 whole red bell pepper finely chopped
  • 3 garlic clove minced
  • 1 lb. ground turkey
  • 2 large eggs
  • ½ cup grated parmesan
  • ¾ cup bread crumbs (or regular or gluten-free breadcrumbs)
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup Low Calorie Barbecue Sauce or store-bought

  • Preheat the oven to 350 degrees F. Oil a loaf pan with 1 teaspoon of olive oil, or olive oil baking spray. If you don't have a loaf pan oil, use a rimmed baking sheet.
  • In a large skillet, heat a teaspoon of olive oil over medium-high heat. Add the onion and bell pepper and sauté for 5 to 10 minutes, until soft. Add the garlic and continue to sauté, for 1 to 2 minutes, or until soft. Set aside.
  • In a large bowl, add the cooled onion mixture and the remaining ingredients except for 1/4 cup of the BBQ sauce. Mix with your hands until just combined (over mixing will make a tough meat loaf).
  • Transfer the meat mixture to the loaf pan and shape it into a loaf. (If you’re using a baking sheet just mold the meat loaf into a log shape.) Top with the remaining BBQ sauce.
  • Bake for 1 hour, or until the internal temperature is 165 degrees F. Let the meat loaf rest for 10 minutes, then cut it into eight slices and serve.

Mini Meatloafs

  • Oil 8 muffin cups, instead of a loaf pan.
  • Add the prepared turkey meatloaf mixture to the cups, and bake for 45 minutes, or until the internal temperature is 165 degrees F. Let the mini turkey meatloaves rest for 10 minutes, then remove from muffin tins and serve.
