  • 1 pound sirloin steak
  • ¼ cup red wine
  • 4 inch sprig of rosemary
  • 2 garlic cloves chopped
  • 2 tablespoons olive oil
  • ½ teaspoon spicy mustard I like English mustard here but any will do
  • Salt and pepper

Instructions

  • Combine the wine, rosemary, chopped garlic, olive oil and mustard in a gallon freezer bag or casserole dish. Wisk together to distribute the mustard, add the steak, sprinkle with salt and pepper and marinate for one hour.
  • Preheat oven to 350 degrees, or your barbeque to medium heat.
  • FOR OVEN COOKING- Heat a ridged cast iron pan on medium high, place steak on and grill each side for 5-6 minutes. Place the pan in the oven for 15 minutes, less or not at all if it’s a thin cut. This will give you a medium cooked steak.
  • FOR BARBEQUE GRILLING- Place the steak on the barbeque 5-7 minutes on each side keeping the lid closed. The trick it to cook the steaks on a medium heat which keeps the inside tender, and the outside slightly charred. This will give you a medium cooked steak.
  • When the steak is done don’t cut into it for 10 minutes, allowing it to rest will result in a tender and juicy cut of meat. Slice thinly against the grain and place on a pretty plate, serve with wine.

Steak:

  • 1 lb Top Sirloin Steak cut into 4 equal parts
  • 1 tsp Garlic Powder
  • ½ tsp Cayenne Powder
  • 1 tsp sea salt

Salad:

  • 2 cups Frozen Corn Kernels
  • 1 can of Black Beans drained and rinsed
  • ½ cup chopped Artichoke Hearts
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp good Extra Virgin Olive Oil
  • 1 tsp Garlic Powder
  • 1 tbsp Dried Basil
  • Salt and Pepper to taste

Instructions

  • At least two hours before or the night before mix the seasonings for the steak together, rub on both sides of the steak, wrap in cling wrap and place in the fridge.
  • An hour before cooking take out of fridge and get to room temp and slice into 4 oz servings.
  • In a large bowl combine the corn, beans and the artichokes, in a small bowl combine the rest of the ingredients for the dressing and whisk, pour onto the corn and bean mixture and toss well let sit out for an hour before serving to marry the flavors and get to room temp. You can make several hours before serving and keep in the fridge also.
  • Time to BBQ up the steak, for medium cooked steaks pre heat the BBQ on medium heat for 10 minutes.
  • Put the steaks on the BBQ 5-7 minutes on each side keeping the lid closed. The trick it to cook the steaks on a medium heat which keeps the inside tender, and the outside slightly charred. This is a cheaper, leaner cut of meat so you don’t want to cook it on high heat it will make it tough.
  • Remove steaks from heat and let them sit for 10 minutes before serving, this way they remain juicy and tender.

Steak

  • 1 lb Sirloin steak
  • 1 tsp Garlic Powder
  • ½ tsp Cayenne Powder
  • 1 tsp sea salt
  • 1 tbsp olive oil

Asparagus and Potatoes

  • 2 bunches of asparagus
  • 1 lb small bite sized potatoes whatever is on sale
  • 1 lemon juice and zest
  • 4 garlic cloves
  • 1 ½ tsp dried basil
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
Ā 

  • Preheat oven to 350 spray 2 rimmed baking sheets with cooking spray.
  • Mix the garlic, cayenne and salt together in a bowl, rub on both sides of the steak wrap the steak in cling wrap and refrigerate for at least one hour or overnight.
  • Boil potatoes for 20 minutes in a large sauce pan, strain and let cool so that you can handle them. Once they have cooled spread out on a baking sheet and slightly squish them being careful to keep them intact, you just want to slightly flatten them.
  • Snap the bottoms off the asparagus off and spread out on the other baking sheet. In a medium bowl shred the garlic then add the lemon juice, zest, oil, basil, salt and pepper and mix well. Top the asparagus and the potatoes with this mixture and place in oven for 35 minutes.
  • Heat 1 tbsp olive oil in a ridged cast iron pan on medium high, place steak on and grill each side for 5-6 minutes. Place the pan in the oven for 15 minutes, less if it is a thin cut. When the steak is done don’t cut into it for 10 minutes, let it rest that is how you keep it tender and juicy. Slice thinly and place on a pretty plate.

Ingredients

  • 2 to p round steaks- 5 ounce each
  • ¼ cup Panko bread crumbs
  • 2 tablespoons crumbled goat cheese
  • ¼ cup frozen corn kernels
  • 1 garlic clove finely chopped
  • 2 tablespoons dried or fresh chopped parsley
  • 1 tablespoon olive oil
  • Salt and pepper

Instructions

  • Pre-heat Barbeque to medium low with the lid closed. On a clean surface lay out a 2 foot piece of plastic wrap, place one steak in the middle of the plastic wrap and cover with a second two foot piece of plastic wrap.
  • With aĀ Meat Tenderizer orĀ Rolling Pin beat the steak, really! Tenderize -or beat- it until it’s half the thickness and into a rectangle. This will make the steak tender and give us the ability to roll it up. Move steak to a clean surface and work on the second steak until it’s also flat and tender.
  • In a bowl combine Panko breadcrumbs, cheese, corn, garlic and parsley.
  • Using a fork crumble everything together.
  • Salt and pepper the steaks on both sides, place both steaks on a cutting board lengthwise. Place two 1 foot sections of kitchen twine under each steak, one ½ an inch from the top and one ½ from the bottom.
  • Divide the goat cheeseĀ Panko mixture and mound in the middle of each steak, then gently push down keeping away from the top and bottom ending where the kitchen twine is.
  • Gently roll up then tie the strings and cut off any access. Mixture that has fallen out can be gently pushed back in.
  • Coat each steak with olive oil and place on the medium low barbecue for 20-30 minutes, you can also cook on the stove top in a grill pan.
  • Turn every 5 minutes to brown and cook all sides, keep lid closed.
  • When the cheese starts to melt in the center it should be done.
  • Move to a plate and let sit for 10 minutes, cover loosely with foil to keep in heat. Cut off strings and serve

For the steak

  • 1 pound sirloin steak
  • 1/2 tbsp olive oil
  • 1 tsp lavender salt regular Sea salt is fine
  • 1 tsp Herbs De Provence
  • 1/4 tsp cayenne powder
  • 2 tsp garlic powder

For the salad-

  • 2 cups baby spinach
  • 2 cups arugula
  • 4 asparagus spears
  • 1 to mato
  • 1 cup frozen corn
  • 1/4 cup goat cheese
  • handful of basil optional
  • For the dressing
  • 2 tbsp balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 tsp salt
  • 1/4 cup pomegranate juice
  • 2 tsp extra-virgin olive oil

Instructions

  • In a small bowl combine lavender salt, Herbs De Provence, cayenne and garlic, mix well. Rub on both sides of the steak, cover steak in cling wrap place in the fridge for two hour or overnight.
  • Heat 1 tbsp olive oil in a ridged cast iron pan on medium high, place steak on and grill each side for 5-6 minutes. Place the pan in the oven for 15 minutes, less if it is a thin cut. When the steak is done don’t cut into it for 10 minutes, let it rest that is how you keep it tender and juicy.
  • In a small bowl combine corn with a quarter cup of water, stick in the microwave for 3 min. Remove from microwave and let sit for five more minutes before draining the water.
  • Using a vegetable peeler, peel the asparagus into long strips, set aside. Chop the tomato into bite-size pieces and set aside.
  • Combine all dressing ingredients in a medium bowl and mix well, set aside.
  • On a large plate or in a large bowl rip up the spinach leaves, then top with the arugula, thenĀ  the asparagus strips, tomatoes, corn. Drizzle dressing on salad. Thinly slice the steak place on top of the salad, crumble the cheese on top and rip some basil on top, now you’re ready to serve.

  • 1.5 oz grilled steak sliced very thin
  • ¼ cup low fat cheddar cheese shredded
  • ¼ avocado finely sliced

  • Place one slice of bread on a plate, layer ā…“ of the cheese, then steak, another ā…“ Ā of the cheese, then avocado slices, the rest of the cheese, sprinkle on salt and pepper if desired, place second slice of bread on top.
  • Heat a ridged cast iron grill on medium, spray w/ cooking spray or olive oil in a Misto can, gently move the sandwich to the pan and then place on top of the sandwich another pan, the heaviest one you’ve got, this will squish down the sandwich without needing a fancy Panini maker. After a couple of minutes flip sandwich and put the heavy pan on top again. Remove from pan, slice in half and enjoy.
  • The avocado adds such a rich creaminess to this Steak, Avocado and Cheddar Healthy Panini Sandwich recipe you don’t need so much cheese, this would also be a great snack or dinner on a weeknight. If you don’t have steak get creative, left over chicken or ham will also work great here.

  • 1 onion diced
  • 3 cloves Garlic finely chopped
  • 1 tbsp Olive Oil
  • 1 LB lean ground beef
  • 2 eggs
  • ½ cup Parmesan or Romano cheese or a combo of the two
  • ¾ cup bread crumbs
  • 2 roasted red peppers chopped
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • ¼ cup Mozzarella cheese

Instructions
Ā 

  • Pre-heat oven to 350, oil (cooking spray is fine) a loaf pan and a rimmed baking sheet.
  • Put oil in pan, heat on med-high and add the onions cooking for 5-10 min until soft. Toss in the garlic and cook for another 5 min, remove from pan to a plate to cool. While the onions and garlic cool put everything else in a large bowl, hold the marinara and Mozzarella back though. Once the onion mix is cool add to the bowl and mix with your hands until just combined, don’t over mix it will make the meat tough. Mold into an loaf pan, top with marinara sauce. Set aside while you get on with the potatoes.
  • Add the meat loaf to the oven for 50-60 minutes, after about an hour take out the meatloaf, top with mozzarella and put back into oven and broil at 400 for 3-5 min, watch so it doesn’t burn.
  • Take out meatloaf and let it rest for 10 minutes. Time to plate and serve.
