You can use any color of bell peppers you like to make this recipe. I love red bell peppers and yellow also make for a pretty presentation. But you can choose your favorite colors.
And if you don’t like or can’t have jalapeños, simply add in 1/2 (or a full) green bell pepper for the same visual effect. It will still be delicious.

How to Make Healthy Steak Fajitas
I recommend making the marinade as far ahead of time as you can. I like to make the spice rub and add 1/2 to a large bag and 1/2 to a small bag. Then I cut up the steak as directed and add to the large bag. I even go so far to pop the small bag of additional spices in the bag of steak slices and add it all to the freezer.
This means I can get the prep work for the fajita meat out of the way and add it to the freezer for later in the week.

How to Make Skinny Steak Fajitas:
- In a bowl combine the cayenne, chili powder, oregano, garlic powder and salt.
- Mix well then move 1/2 of the mixture to a large gallon bag, and the other 1/2 to a bowl.
- Add the steak strips to the large bag of spices and shake and squish until all the steak is covered in spices. Place in the fridge for 1-24 hours (the longer the better.)
- Heat your largest skillet over medium-high heat, and spray with olive oil.
- Add in the bell pepper, onion, jalapeño and the bowl of spices.
- Mix together and cook until the onions and bell pepper are soft, about 10-15 minutes.
- Add in the marinated steak, and brown on both sides about 5 minutes.
- Serve with tortillas (or lettuce wraps for low carb) and your favorite toppings.
