I like cook the bacon ahead of time. But if you don’t, just cook it on another burner while you cook the chicken.


How to Make Healthy Monterey Chicken:
- Heat a pan over medium high heat and spray with olive oil.
- Sprinkle the salt and pepper all over the chicken and then add to the hot pan.
- Cook the chicken for 5-6 minutes. Flip and cook an additional 4-5 minutes until cooked through.
- Pour the barbecue sauce over the chicken, then top with cheese.
- Cover the pan and cook for an additional 2-3 minutes until the cheese melts.

Low Sodium Tips: You can easily lower the sodium by making your own BBQ sauce (recipe attached) and omit the salt from that recipe. Also, omit the salt from the chicken recipe. No need for a swap, the cheese and flavors of the bacon will be enough. (You can also take out the bacon if you like).
