Meal Prep: You can meal prep this healthy recipe easily. Simply assemble, wrap in parchment paper and add to a plastic bag or container.
Storage: Will hold for 2 days in the fridge (may get soggy, so 1 day is ideal), does not do well in the freezer.

These Low Calorie BBQ Chicken Sandwiches are just 319 calories and are packed with 32.1g of protein!
I was able to keep the calories low thanks to my low calorie bBQ sauce and low calorie burger buns. But as you will see below, you can use store-bought instead.
Special Tip: If you choose to use store-bought buns, hollow out the center a bit, this will cut the calories. For store-bought BBQ sauce, look for "organic" it should be lower in calories and won't have all the chemicals and preservatives.

Low Calorie BBQ Chicken Sandwiches:

Low Calorie Cole Slaw:

  • 1 cup Cole slaw mix
  • 2 tablespoons 0% Greek Yogurt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon brown sugar
  • ¼ teaspoon lemon juice
  • teaspoon salt
  • teaspoon pepper

Instructions
 

  • To a medium bowl combine the Cole slaw ingredients and mix well. Cover and place in the fridge for 30 minutes to an hour.
  • To a skillet over medium heat, spray with olive oil and add the chicken breast. Sprinkle with salt and pepper and cook for 5 minutes on each side until cooked through with no pink in the center.
  • Move the chicken to a plate and shred with 2 forks.
  • Add the chicken back to the skillet along with the BBQ sauce, and heat on low for 5 minutes until the sauce is hot.
  • To assemble the sandwiches, slice the buns in half, and add 1/2 of the chicken to the bottom half. Top each with 1/2 of the Cole slaw, and finally the top half of the bun.
  • Serve hot.
