Ingredients in Healthy BBQ Chicken Sandwiches

For the “Coleslaw mix” look in the bagged salad section of the grocery store. You’ll find a shredded combination of cabbage and carrots called “ColeSlaw Mix” this is what you want. It won’t come with sauce, and that’s a good thing. We are going to make our own low calorie sauce.

I like to use my own homemade BBQ sauce and Low Calorie Buns, but you can get store-bought if you prefer. I have supplied notes in the recipe card below on how to make the store-bought versions healthier and lower in calories!

  • Coleslaw mix
  • 0% Greek Yogurt
  • Apple cider vinegar
  • Dijon mustard
  • Brown sugar
  • Lemon juice
  • Salt and pepper

How to Make Healthy Pulled Chicken Sandwiches

If you have leftover cooked chicken, you can skip cooking the chicken. Just shred the leftover chicken breast (or get 1 cup of shredded chicken) and add it to the pan with the BBQ sauce. This will save you time and money.

If you like, you can make the coleslaw well ahead of time. I have made it a day before and it’s great. Just make sure yo mix it well if you make it a day ahead of time.

How to Make Healthy Pulled Chicken Sandwiches:

  1. To a medium bowl combine the Cole slaw ingredients and mix well. Cover and place in the fridge for 30 minutes to an hour.
  2. To a skillet over medium heat, spray with olive oil and add the chicken breast. Sprinkle with salt and pepper and cook for 5 minutes on each side until cooked through with no pink in the center.
  3. Move the chicken to a plate and shred with 2 forks.
  4. Add the chicken back to the skillet along with the BBQ sauce, and heat on low for 5 minutes until the sauce is hot.
  5. To assemble the sandwiches, slice the buns in half, and add 1/2 of the chicken to the bottom half. Top each with 1/2 of the Cole slaw, and finally the top half of the bun.
  6. Serve hot.

I was able to keep the calories low thanks to my low calorie bBQ sauce and low calorie burger buns. But as you will see below, you can use store-bought instead.
Special Tip: If you choose to use store-bought buns, hollow out the center a bit, this will cut the calories. For store-bought BBQ sauce, look for "organic" it should be lower in calories and won't have all the chemicals and preservatives.
