How to Make Healthy Stuffed Chicken Breast:
- Preheat the oven to 425 degrees, and spray a 9×9 baking dish with olive oil.
- To a small bowl, combine the honey, balsamic vinegar, soy sauce, garlic and pepper. Mix well and set aside.
- One at a time, add a chicken breast to your cutting board. Using a sharp knife, slice horizontally into the thicker side of the breast and continue cutting to make a pocket inside. (Quick Tip: If you place one hand on top of the chicken breast as you do this, it makes it easier.)
- Fill the chicken breast with tomato slices, cheese, and basil. Move to the baking dish, and then start working on the second chicken breast.
- Pour the balsamic glaze over the chicken breasts, and bake for 20-25 minutes until cooked through.
