½tablespoonhoney(or keto maple syrup to lower the sugar)
⅛cupbalsamic vinegar
½tablespoonlow sodium soy sauce(or Tamari for gluten-free)
2clovesgarlicminced
½teaspoonpepper
2boneless skinless chicken breasts
2sliced mozzarella cheese
1Roma tomatosliced
6basil leaves
Instructions
Preheat the oven to 425 degrees, and spray a 9x9 baking dish with olive oil.
To a small bowl, combine the honey, balsamic vinegar, soy sauce, garlic and pepper. Mix well and set aside.
One at a time, add a chicken breast to your cutting board. Using a sharp knife, slice horizontally into the thicker side of the breast and continue cutting to make a pocket inside. (If you place one hand on top of the chicken breast as you do this, it makes it easier.)
Fill the chicken breast with tomato slices, cheese, and basil. Move to the baking dish, and then start working on the second chicken breast.
Pour the balsamic glaze over the chicken breasts, and bake for 20-25 minutes until cooked through.
