These egg, tortilla breakfast recipes take just 15 minutes to make (from start to finish) and they can be frozen and re-heated at a later date!

How to Make Breakfast Wraps to Go:
- Heat a skillet over medium heat, add the spinach and cook until it starts to wilt. About 5 minutes.
- Remove the spinach to a plate.
- Whisk the 4 eggs in a medium bowl, spray the pan with olive oil, and add the eggs to the pan.
- Scramble the eggs until just set, then remove from the heat.
- To each tortilla add eggs, 1/8 cup of cheese, cooked spinach and diced tomato (and optional meat)..
- Roll up the breakfast wraps like a burrito, cut in half, and serve hot.
You Can FREEZE Breakfast Wraps!
- Wrap each tortilla breakfast wrap in Parchment Paper.
- Place the breakfast wraps in a gallon freezer bag.

- 4 eggs
- 1 tomato diced
- 4 large whole wheat tortillas
- ½ cup pepper jack cheese shredded
Optional Meat (choose 1):
- 4 Turkey Breakfast Sausage patties cooked and diced
- 2 slices of bacon cooked and crumbled
- ¼ cup diced cooked ham
