How to Make Healthy Pho Soup
- Heat a pot over medium heat, add in the coriander and clove and toast until fragrant (about 1 minute).
- Add the ginger, green onions and garlic clove and cook until fragrant (about 1 minute).
- Add in the cilantro stems, chicken broth, water and chicken breasts. Bring to a boil over high heat, then reduce heat to a simmer (about 10 minutes).
- When the chicken is cooked through, remove it to a plate and shred.
- Strain the broth with a find mesh strainer, and discard all the solids.
- Return the broth to the pot with the shredded chicken, rice noodles, and fish sauce.
- Cook for 8-10 minutes, until the noodles are cooked through. Then top with cilantro leaves.
- Serve with optional toppings, season with salt and pepper as needed.
