Chicken Pho:
1
teaspoon
coriander seeds
1
clove
1
inch
of fresh ginger
peeled and sliced into 4 rings
2
green onions
quartered
1
whole garlic clove
peeled
1
bunch cilantro
stems separated from leaves

chicken broth

cups
water

chicken breasts
4
ounces
rice noodles

teaspoons
fish sauce
Chicken Pho Toppings:
bean sprouts
basil leaves
cilantro
lime wedges
sliced peppers
jalapeños or chili peppers
sliced green onions
Instructions
Heat a pot over medium heat, add in the coriander and clove and toast until fragrant (about 1 minute).
Add the ginger, green onions and garlic clove and cook until fragrant (about 1 minute).
Add in the cilantro stems, chicken broth, water and chicken breasts. Bring to a boil over high heat, then reduce heat to a simmer (about 10 minutes).
When the chicken is cooked through, remove it to a plate and shred.
Strain the broth with a find mesh strainer, and discard all the solids.
Return the broth to the pot with the shredded chicken, rice noodles, and fish sauce.
Cook for 8-10 minutes, until the noodles are cooked through. Then top with cilantro leaves.
Serve with optional toppings, season with salt and pepper as needed.
