Ingredients You’ll Need:

  • 1 yellow onion
  • 2 garlic cloves
  • 2 pounds of carrots 
  • 4 cups vegetable broth
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 oz light cream cheese (optional)

Healthy Carrot Soup Meal Prep and Storage

Meal Prep – Cook the soup and then allow to cool completely. Scoop single servings into individual containers, or family sized servings into gallon freezer bags (or jars/containers with lids). 
Frozen Soup – Be sure any container is only filled 2/3 full as the soup will expand in the freezer. Store for up to a month in the freezer. If freezing gallon bags, lay flat to freeze to save storage room. 
Refrigerated Soup – Will hold in the refrigerator for 4 days.
Reheating – Add to a medium or large sauce pot, heat frozen for 30 minutes on low, or defrosted soup for 5-10 minutes over medium-low heat.

Equipment

Ingredients
 
 

  • 1 yellow onion chopped
  • 2 garlic cloves chopped
  • 2 pounds of carrots peeled and sliced
  • 4 cups vegetable broth
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 3 oz light cream cheese optional

Optional Toppings:

  • Greek Yogurt
  • Chopped Chives
  • Sliced Green Onions
  • Cooked and Crumbled Bacon

Instructions
 

  • To a slow cooker add the onion, garlic, carrots, vegetable broth, salt and pepper.
  • Cook on LOW for 5 hours or on HIGH for 2.5 hours.
  • Use an immersion blender to blend the soup until all the solid pieces are gone. (Alternatively you can cool the soup and then add to a countertop blender).
  • If you desire, add in the cream cheese (adds about 50 calories per serving) and mix until melted.
  • Serve hot with any desired toppings.
