- 2 boneless skinless chicken breasts
- 1 tomato cut into slices

Healthy Hasselback Caprese Chicken Meal Prep and Storage
Meal Prep: You can meal prep 2 ways. You can cook the healthy recipe completely then store for later, or add the ingredients to a bag, mix and add to the freezer for later.
Storage: Will hold in the fridge for 5 days and the freezer for a month.
Reheating: Reheat in the microwave for 1-3 minutes, or in a 350 degree oven until warmed through (about 20 minutes)

Ingredients
- 2 boneless skinless chicken breasts
- 1 tomato cut into slices
- 2 oz mozzarella (1/4 cup) sliced or shredded
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Olive oil spray
- 2 tablespoons chopped basil
- 2 teaspoons balsamic vinegar optional
Instructions
- Preheat the oven to 450°.
- Hasselback the chicken breasts… cut 5 sliced into each chicken breast 3/4 way through.
- Add the chicken breasts to a 9×9 casserole dish.
- Stuff each slice with 1 slice of tomato and some cheese.
- Lightly sprinkle the tops with salt and pepper, and spray with olive oil.
- Bake for 15-18 minutes, until cooked through with no pink in the center.
- Top with basil and if you desire, balsamic vinegar and serve hot.
