  2. Slice the tops of the tomatoes off, and scoop out (and discard) the pulp and seeds.
  3. Salt insides and rest upside down over the paper towel lined casserole dish extract juices, about 15 minutes.
  4. Meanwhile, in a medium bowl, mix together the chicken, Parmesan cheese, and 1/4 cup marinara sauce.
  5. Flip the tomatoes cut side up, and discard the paper towels. 
  6. Stuff the tomatoes with the filling. Spoon over the remaining marinara sauce, and then top with the mozzarella cheese.
  7. Bake for 30 minutes, until tomatoes are cooked through and tops are golden brown.
