I like to serve this baked tomatoes recipe with a side salad, it's especially yummy with a caesar salad. But sometimes I enjoy 3 chicken Parmesan stuffed tomatoes for dinner… 3 baked stuffed tomatoes are just 378 calories, and super filling!

  • Preheat oven to 400° and line a casserole dish with 2 layers of paper towels.
  • Slice the tops of the tomatoes off, and scoop out (and discard) the pulp and seeds.
  • Salt insides and rest upside down over the paper towel lined casserole dish extract juices, about 15 minutes.
  • Meanwhile, in a medium bowl, mix together the chicken, Parmesan cheese, and 1/4 cup marinara sauce.
  • Flip the tomatoes cut side up, and discard the paper towels.
  • Stuff the tomatoes with the filling. Spoon over the remaining marinara sauce, and then top with the mozzarella cheese.
  • Bake for 30 minutes, until tomatoes are cooked through and tops are golden brown.
