How to Make Baked Tomatoes with Cheese and Chicken:
- Preheat oven to 400° and line a casserole dish with 2 layers of paper towels.
- Slice the tops of the tomatoes off, and scoop out (and discard) the pulp and seeds.
- Salt insides and rest upside down over the paper towel lined casserole dish extract juices, about 15 minutes.
- Meanwhile, in a medium bowl, mix together the chicken, Parmesan cheese, and 1/4 cup marinara sauce.
- Flip the tomatoes cut side up, and discard the paper towels.

- 1/2 cup cooked, shredded chicken
- 2 teaspoons parmesan cheese
