Summer Squash Tips: If you’re making this recipe with summer squashes (zucchini, yellow squash, etc.) follow the directions below.
Winter Squash Tips: And if you want to make this ranch baked squash recipe with a winter squash (acorn, butternut, etc.) scrape out the seeds and peel the rind while you’re cutting the squash. You’ll want to discard any thick rinds and large seeds from winter squashes.
How to Make Low Calorie Ranch Baked Zucchini Recipes:
- Preheat oven to 450° and line a rimmed baking sheet with parchment paper.
- Cut the ends off the zucchini, then slice in half down the middle. Cut into 1/2 inch half-moons, and place in a large bowl.

I’m so glad you both loved the recipe!!
Finally got my husband to eat zucchini! I love this recipe so much, make it at least one a week. Put mine under the broiler to get a bit of that roasted taste. Going to try the air fryer next time, see if they crisp up a bit more. Your homemade ranch dressing mix is the best!

Mine tasted great, but didn’t crisp up. They are still pretty soft. Of course we still ate them… yummy!
