This Low Calorie Zucchini Boats Recipe is just 47 calories each, and it’s vegetarian. Though I have supplied you with several protein add ins (just in case). These healthy zucchini boats make great side dishes, and this recipe is almost 100% vegetables.

Baked Stuffed Zucchini Boats

Ingredients You’ll Need:

  • Olive Oil Spray
  • 4 medium zucchini
  • ½ teaspoon Homemade Seasoning Salt (or store bought)
  • 1 bell pepper
  • 1 small red onion
  • ½ cup frozen corn
  • ¼ cup black olives
  • ¼ cup shredded cheese mozzarella, cheddar, pepper jack

This vegetarian baked stuffed zucchini boats recipe is only 47 calories and so easy to make!
These veggie stuffed squash boats make a wonderful side dish, or healthy snack.
You can add cooked and crumbled meat to this recipe if you like. Just cook and crumble beef, turkey or chicken (or use leftover shredded chicken) and add it to the veggie mixture before filling the easy zucchini boats.

Ingredients
 
 

  • Olive Oil Spray
  • 4 medium zucchini
  • ½ teaspoon Homemade Seasoning Salt or store bought
  • 1 bell pepper minced
  • 1 small red onion minced
  • ½ cup frozen corn
  • ¼ cup black olives
  • ¼ cup shredded cheese mozzarella, cheddar, pepper jack

Instructions
 

  • Preheat the oven to 400°
  • Spray a 9×13 baking sheet with Olive oil.
  • Cut the zucchini in half lengthwise, then use a spoon to carefully scoop the flesh out of the zucchinis.
  • Trim off the ends, and place in the prepared baking sheet, cut side up.
  • In a medium bowl, combine the bell pepper, onion, corn, and olives. Mix together.
  • Sprinkle the zucchinis with Seasoning Salt and spoon the veggie mixture into each zucchini well.
  • Top each with cheese and spray lightly with olive oil.
  • Bake for 25 minutes, until zucchini is tender and cheese is melted.
