  1. Preheat the oven to 400°
  2. Spray a 9×13 baking sheet with Olive oil.
  3. Cut the zucchini in half lengthwise, then use a spoon to carefully scoop the flesh out of the zucchinis.
  4. Trim off the ends, and place in the prepared baking sheet, cut side up.
  5. In a medium bowl, combine the bell pepper, onion, corn and olives. Mix together.
  6. Sprinkle the zucchinis with Seasoning Salt and spoon the veggie mixture into each zucchini well.
  7. Top each with cheese and spray lightly with olive oil.
  8. Bake for 25 minutes, until zucchini is tender and cheese is melted.
