How to Make Healthy Zucchini Fritters
This zucchini patties recipe is easy to make with nothing more than a bowl and a box cheese grater!
It is important to squeeze out the moisture from the zucchini, so use a kitchen towel, cheese cloth or paper towels to get them good and dry… otherwise you’ll have soggy fritters!
How to Make Healthy Zucchini Patties:
- Preheat oven to 425° and line 2 baking sheets with parchment paper.
- Use a box grater to grate zucchini into a large bowl.
- Move the zucchini onto a piece of cheese cloth, or into a clean kitchen towel and squeeze as much of the moisture out as you can.
- Add the zucchini, egg, shallot, flour, salt and pepper to the bowl and stir to combine.
- Use a 1/4 cup measuring cup to scoop the zucchini mixture. Roll in wet hands into balls.
- Place on the prepared baking sheet and press down into patties.
- Spray with olive oil and place in the hot oven
- Bake for 10-12 minutes, flip, spray the tops with olive oil and bake for an additional 10-12 minutes.
- Serve hot or cold with sour cream, Greek Yogurt or one of the healthy dips below.

This is a great recipe. I added lemon pepper, tobacco sauce and garlic. I also added some crumbled feta in place of the salt.
These were fantastic!!!! I made a few changes. 1st change was to add finely minced garlic one clove. 2nd was to add 3/4 of a cup finely grated Parmesan cheese. Finally one heaping tablespoon of finely chopped Italian parsley. Absolutely delicious, even the children ate them
