Ingredients You’ll Need:

  • 1 16-ounce box of penne pasta
  • 1 pint of cherry tomatoes
  • 2 garlic cloves minced
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 10-15 large basil leaves
  • 4 tablespoons freshly grated parmesan (or nutritional yeast optional)

Meal Prep: I love to meal prep this pasta with light tomato sauce recipe! I make it ahead of time (often for dinner- then store the leftovers as meal prep dinners) and move to either individual meal prep containers, or family sized containers.

This 15 minute cherry tomato pasta recipe is healthy and easy to make. Plus we have included a vegan swap, so everyone can enjoy this cherry tomato pasta.
You can use gluten free pasta, penne pasta, or any shape of pasta that you like. This easy burst cherry tomato pasta works with all styles of pasta.
Finally, you can use as much basil as you like… I buy a small package and use the entire thing.

Ingredients
 
 

  • 1 16-ounce box of penne pasta
  • 1 pint of cherry tomatoes
  • 2 garlic cloves minced
  • ¼ teaspoon salt
  • teaspoon pepper
  • 10-15 large basil leaves
  • 4 tablespoons freshly grated parmesan or nutritional yeast optional

Instructions
 

  • In a large sauce pot bring 4-6 quarts of water to a boil. Then add in the pasta and cook until aldente (according to package). Then drain and set aside.
  • Meanwhile, while the pasta cooks start on the burst tomato sauce.
  • To a large skillet over medium heat, add the tomatoes and cover. Cook for 10 minutes until they start to burst. (Note: if the tomatoes start to stick to the pan, add 2 tablespoons water)
  • Add in the garlic, salt and pepper, and cook for an additional 2-3 minutes until the garlic is fragrant.
  • Pour in the cooked pasta, and toss together, top with basil and cheese (if you desire) and serve hot.
