I love making this recipe! It’s quick (15 minutes total) and so easy. But the best part is how I “clean up”.
I add any remaining lettuce leaves into a meal prep container, top it with the remaining taco meat, and then the toppings. Then I add it to the fridge for tomorrow’s lunch! It’s an amazing next day salad!


How to Make Low Carb Lettuce Wrap Tacos:
- In a large skillet over medium heat, add the meat or plant based crumbles. Cook and crumble until mostly cooked (about 5 minutes).
- Add in the taco seasoning, 1/4 cup of water, and the beans. Mix to combine and reduce to low to simmer for 5 minutes.
- To assemble the tacos add the meat and bean mixture to the lettuce cups, top with tomato, corn and avocado (plus more desired toppings) and serve.
