The best beef stroganoff recipe is made with a homemade sauce. This easy to make, low calorie beef stroganoff sauce recipe is fantastic, and it can be whipped up in a flash!
Now you can make a low calorie steak stroganoff in just 30 minutes, for far fewer calories than the traditional beef stroganoff recipes.
If you have purchased stew meat to make this stroganoff recipe, you can skip the first step. It’s not the most “traditional” cut, but it’s great in a pinch, or when you find stew meat on sale.
How to Make Healthy Beef Stroganoff:
- Slice the beef into 1/2 inch thick strips.
- Add the beef and 1 tablespoon flour, salt & pepper to a bowl and toss together.
- Heat a sauce pan over medium high heat, spray with olive oil. Add the beef to the pan small batches, cook each until lightly browned (about 2 minutes). Remove from pan to a plate.
- Lower heat to medium and add onion. Cook 4-5 minutes until soft.
- Add mushrooms & garlic and cook until softened, about 2-5 minutes more.
- Next, add butter and melt, then stir in 1 tablespoon of flour and mix together.
- Add broth, Worcestershire sauce, dijon mustard, and thyme. Bring to a boil, then reduce heat and simmer 5-10 minutes. until the sauce has thickened.
- Add beef and any juices from the plate to the pan. Cook 2-5 minutes until heated through.
- Remove from the heat (very important) and add in the Greek Yogurt. Mix together and serve immediately.
