The trick here is using just one slice of bacon for the entire batch, but chopping it very finely. This way you get all the flavor without all the calories.

You can also skip the bacon, this will save you 5 calories per jalapeño popper!

How to Make Healthy Jalapeño Poppers

The trick to controlling the spiciness is all in how you prep the jalapeños. Removing all the seeds and ribs will take out the heat and make them mild.

How to Make Spicy, Medium and Mild Jalapeño Poppers:

  • Mild – remove all the seeds and ribs (the white parts in the middle of the jalapenos)
  • Medium – remove all the seeds and 1/2 of the ribs
  • Hot – remove all the seeds but leave the ribs in the jalapenos
  • 5 Alarm Fire – leave the seeds and ribs, but be ready for super spicy!

How to Make Skinny Jalapeño Poppers:

  1. Preheat the oven to 425 degrees.
  2. In a small bowl combine the garlic powder and bread crumbs. Mix together and set aside.
  3. Cut the jalapeños in half lengthwise and remove the seeds and ribs. Adding to a baking sheet as you work.
  4. Spread 1/2 tablespoon of the cream cheese into each of the empty jalapeño boats.
  5. Top with the breadcrumb mixture, then the cheese and finally the bacon.
  6. Bake with the cut side up for 15 minutes until the cheese is melted and browned.
  7. Move to a serving plate, top with green onions, and serve hot.
