Shopping List for Skinny Sweet Potato Appetizer:

- Chopped walnuts (optional)
How to Make Healthy Sweet Potato Appetizers
You can easily make these ahead of time. Here’s what I recommend.
Bake the sweet potato rounds, then cool completely (and leave on the baking sheets). Next top with cheese and cover. Ten minutes before you want to serve, pop in a hot oven (450 degrees) or under a broiler on low. Finally, remove and top with the cranberries, salt, pepper, and thyme and serve.

How to Make Healthy Sweet Potato Appetizers:
- Preheat the oven to 450 degrees and line 2 large baking sheets with parchment paper.
- Cut the sweet potatoes into 1/4 inch rounds (8 rounds per sweet potato) and place on the baking sheets in a single layer as you work.
- Spray the sweet potatoes with olive oil.
- Bake the sweet potato rounds in the oven for 10 minutes. Flip and bake an additional 10 minutes. (20 minutes total)
- Meanwhile, slice the brie in half, then cut those halves in half (so you have 4 large wedges). Cut each of the 4 wedges into 6 slices (this will give you 24 small pieces of brie).
- Remove the potato bites from the oven and immediately add a slice of brie to each so it melts (you can also add back to the hot oven for 2-3 minutes if you are in a rush.)
- Top each with cranberries, salt and pepper and if you like, a little thyme and walnuts.
- Serve hot, cold, room temperature. These are great anyway you serve them!
