Holidays are stressful enough, I didn’t want to add a ton of text and draw this recipe out (like most others would) so I kept it short and to the point. Plus I included these links so you can jump ahead to the sections you are looking for.

When it comes to holiday appetizers, it’s hard to beet the ever impressive brie wheel. And instead of plopping down a big wheal of cheese, try making these quick and easy appetizers instead.

Perfect for Thanksgiving and Christmas, these yummy bites also work for Hanukkah and any get together you host or need an appetizer for.

Shopping List for Sweet Potato Rounds:

  • 3 large sweet potatoes
  • Olive oil spray
  • 8 oz brie wheel
  • 1/4 cup dried cranberries
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon fresh thyme (optional)
  • 1/4 cup chopped walnuts (optional)

How to Make Sweet Potato Appetizers

You can easily make these ahead of time. Here’s what I recommend…

Bake the sweet potato rounds, then cool completely (and leave on the baking sheets). Next top with cheese and cover. Ten minutes before you want to serve, pop in a hot oven (450 degrees) or under a broiler on low. Finally, remove and top with the cranberries, salt, pepper, and thyme and serve.

How to Make Sweet Potato Bites:

  1. Preheat the oven to 450 degrees and line 2 large baking sheets with parchment paper.
  2. Cut the sweet potatoes into 1/4 inch rounds (8 rounds per sweet potato) and place on the baking sheets in a single layer as you work.
  3. Spray the sweet potatoes with olive oil.
  4. Bake the sweet potato rounds in the oven for 10 minutes. Flip and bake an additional 10 minutes. (20 minutes total)
  5. Meanwhile, slice the brie in half, then cut those halves in half (so you have 4 large wedges). Cut each of the 4 wedges into 6 slices (this will give you 24 small pieces of brie).
  6. Remove the potato bites from the oven and immediately add a slice of brie to each so it melts (you can also add back to the hot oven for 2-3 minutes if you are in a rush.)
  7. Top each with cranberries, salt and pepper and if you like, a little thyme and walnuts.
  8. Serve hot, cold, room temperature. These are great anyway you serve them!

These easy sweet potato rounds only require 4 ingredients (if you don’t count salt and pepper) and are so impressive! I think they are best hot, but they also hold up well sitting out and are good cold should you want to make them ahead of time.
