You only need a handful of ingredients (4 if you don't count salt and pepper) and these appetizers are great for holidays and gatherings of all kinds.
Special Tip: Though I find that these are best with brie cheese, gruyere and goat cheese are also great if you don't like brie.

Ingredients

  • 3 large sweet potatoes
  • Olive oil spray
  • 8 oz brie wheel
  • ¼ cup dried cranberries
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon fresh thyme optional
  • ¼ cup chopped walnuts (optional)

Instructions

  • Preheat the oven to 450 degrees and line 2 large baking sheets with parchment paper.
  • Cut the sweet potatoes into 1/4 inch rounds (about 8 rounds per sweet potato) and place on the baking sheets in a single layer as you work.
  • Spray the sweet potatoes with olive oil.
  • Bake the sweet potato rounds in the oven for 10 minutes. Flip and bake an additional 10 minutes. (20 minutes total)
  • Meanwhile, slice the brie in half, then cut those halves in half (so you have 4 large wedges). Cut each of the 4 wedges into 6 slices (this will give you 24 small pieces of brie).
  • Remove the potato bites from the oven and immediately add a slice of brie to each so it melts (you can also add back to the hot oven for 2-3 minutes if you are in a rush.)
  • Top each with cranberries, salt and pepper and if you like, a little thyme and walnuts.
  • Serve hot, cold, room temperature. These are great anyway you serve them!
