I like to add in green salsa. It makes these taste just like Del Tacoā€™s bean burritos, but these are a healthy version I can feel good about eating and serving.

You can use fat free or regular refried beans, choose what you prefer or what is on sale. To make things easy, the nutrition reflects regular refried beans.

Shopping List for Low Calorie Bean Burritos:

  • (16-oz) canĀ refried beans
  • Low Calorie SalsaĀ (or store-bought)
  • Yellow onionĀ minced
  • Paprika
  • Garlic powder

  • (10-inch) flour tortillasĀ (burrito sized)

How to Make Low Calorie Bean Burritos

I like to toast these burritos in the oven after filling and rolling them up. But if you prefer a soft tortilla you can heat the bean mixture in the microwave or the stovetop, then assemble the burritos with hot beans and serve right away.

How to Make Low Calorie Burritos:

  1. Preheat an oven to 350 degrees and line a baking sheet with parchment paper.
  2. To a medium bowl combine the beans, salsa, onion, paprika, salt, and pepper. Mix well and set aside.
  3. Lay a tortilla on a cutting board and add 1/2 cup of bean mixture to the center. Spread so that it is covering the center of the burrito, then top with 1/8 cup of cheese, and then add any optional add-ins you choose.
  4. Fold the bottom and top edges of the tortilla over the filling. Then fold in the sides and finish by rolling the tortilla up.
  5. Continue filling and rolling the burritos, adding to the prepared baking sheet as you work.
  6. Bake in the oven for 15 minutes, and serve hot.

Meal Prep Directions:

  1. Roll up the burritos as directed, but do not bake. Instead wrap each in parchment paper, and place in a freezer bag or container.
  2. Store in the fridge for 5 days or the freezer for 2 months.
  3. To reheatĀ ā€“ add a defrosted burrito to a parchment paper lined baking sheet and bake at 350 degrees for 15 minutes. Or add to the microwave and cook for 1-2 minutes. For frozen burritos, add to the microwave and cook for 2-4 minutes, flipping once.

I included lots of yummy add-ins. I like to add in Green Salsa (it makes these tase like Del Taco's Bean Burritos) but you can add in your favorite burrito fillings and create your own favorite recipe.
Special Tip: If you don't want to toast the burritos, heat the bean mixture in a small pot on the stove top, or in the microwave. Then finish the filling and rolling of the burritos. That's it, then you're ready to eat.
