These low calorie chicken tacos require only 4 ingredients! I like to make my own taco seasoning, I keep it in a jar and use it all the time for more than just tacos. You can use this taco seasoning on vegetables, steaks, and in all your favorite Mexican recipes.
Of course you can buy some taco seasoning, but check out the recipe, if you have a spice rack you likely already have all the ingredients!
As for the salsa, I recommend picking up your favorite jarred salsa (ideally organic to limit the preservatives). I have included a low calorie salsa recipe for you too, but sometimes it’s nice to just grab a jar from the store.

How to Make Low Calorie Chicken Tacos
This recipe was originally a slow cooker only recipe, and I still believe that it is the best way to make these healthy chicken tacos.
But if you don’t have a slow cooker, or prefer to make these on the stovetop you can do that too. I recently updated this section (and the recipe card below) with stovetop directions.
How to Make Healthy Chicken Tacos:
Slow Cooker Directions:
- Add chicken, lime juice, taco seasoning, and salsa to a slow cooker.
- Cover and cook on low for 8 hours.
- Remove chicken from slow cooker (let cool for 10 minutes to be safe) and shred with 2 forks.
- Add back to the crockpot and mix.
- Serve over tortillas with your favorite taco toppings.
Stovetop Directions:
- Add chicken, lime juice, taco seasoning, and salsa to a large pot.
- Cover and cook on low heat for 2 hours, mix once or twice to avoid burning.
- Remove chicken from pot (let cool for 10 minutes to be safe) and shred with 2 forks.
- Add the shredded chicken back to the pot and mix with the salad and seasoning.
- Serve over tortillas with your favorite taco toppings.

Low Sodium Tips: Make your own Taco Seasoning (I supplied a link to one above) and omit the salt all together. Then add in the zest of 1 lime to the chicken and cook. You can also make your own salsa and omit the salt from that too to lower the sodium as much as possible.
