- 1 lemon
- 2-5 cloves garlic sliced
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- Olive oil spray

Healthy Oven Roasted Asparagus Meal Prep and Storage
Meal Prep: To meal prep a salad, add all the ingredients to individual meal prep containers, or family sized containers. Add the dressing to a separate container and do not add it until you are ready to serve.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.
Serving: If you added the dressing and the salad gets soggy, add it to a sandwich wrap or large tortilla. It’s a great way to salvage leftover soggy salad.

Ingredients
- 1 bunch of asparagus trimmed
- 1 lemon
- 2-5 cloves garlic sliced
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- Olive oil spray
Instructions
- Preheat the oven to 450 degrees.
- Add the asparagus to a rimmed baking sheet.
- Zest the lemon over the tops of the asparagus, then slice and place over the asparagus.
- Sprinkle over the garlic, salt and pepper
- Lightly spray with olive oil, and bake for 12-15 minutes.
Prep Tip:
- To trim the asparagus you can break off the bottoms with your hands, or cut off 1/4 of the botton of the stalk. This part is very fibrous and difficult to chew. Breaking the first one with your hands will show you how short to cut the rest.
