Shopping List for Sloppy Joe Stuffed Zucchini:
- Olive oil spray
- Red onion minced
- Red bell pepper minced
- Garlic minced
- Ground turkey, beef or chicken
- Carrot grated
- Tomato paste
- Tomato sauce
- Mustard
- Honey or maple syrup (see nutrition section below for low sugar tips)
- Balsamic vinegar
- Chili powder
- Paprika
- Salt and pepper (see nutrition section below for low sodium tips)

How to Make Low Calorie Stuffed Zucchini
These healthy stuffed zucchinis could easily be meal prepped! Simply cook the Sloppy Joe mixture and fill the zucchini boats. Top with cheese and add to a casserole dish. Then cover and place in the fridge to bake later in the week.
Leftovers can be stored in the fridge for 4 days and the freezer for a month.


How to Make Sloppy Joe Stuffed Zucchini:
- Preheat the oven to 400°.
- Heat a sauté pan over medium heat, and spray with olive oil.
- Add onion, bell pepper, and garlic and sauté until soft, about 10 minutes.
- Add in the ground meat, and cook until browned, about 10 minutes.
- Add in the carrot, tomato paste, tomato sauce, mustard, honey, vinegar, chili powder, paprika, salt and pepper. Mix and simmer until thick, about 10 minutes.
- Meanwhile, cut the zucchini in half lengthwise, then use a spoon to carefully scoop the flesh out of the zucchinis.
- Trim off the ends, and place on a rimmed baking sheet, cut side up.
- Fill each with Sloppy Joe mixture, it will mound over, this is what you want.
- Sprinkle with cheese (this holds the stuff zucchini together) and place in the oven.
- Bake for 25 minutes, until zucchini is tender and cheese is melted.
- Serve hot.

- 6 ounces tomato paste
- 16 ounces tomato sauce
- 1 tablespoon mustard
- 1 tablespoon honey or maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon chili powder
- 1 tablespoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 large zucchini or 6 small
- 1/3 cup shredded low fat mozzarella (see notes above for cheese free)

Tips to Lower Sodium: Skip the salt and add in lemon juice in it’s place (or omit all together)
