This Low Calorie High Protein Stuffed Zucchini is stuffed with my famous Sloppy Joe Filling! It's packed with hidden vegetables and packed with lots of flavor!These stuffed zucchinis are just 129 calories each (for 1/2 zucchini) and are packed with 17.8g of protein. Of course you will likely want to have more than one, and that is the idea. Have 2 for 258 calories, 3 for 387 calories, and so on. Special Tip: The cheese is there to hold it all together, if you do not like cheese or can't have it, bake these stuffed zucchinis in a 9x31 baking dish and expect a little spillage into the baking dish.
⅓cupshredded low fat mozzarella(see notes above for cheese free)
Instructions
Preheat the oven to 400°.
Heat a sauté pan over medium heat, and spray with olive oil.
Add onion, bell pepper, and garlic and sauté until soft, about 10 minutes.
Add in the ground meat, and cook until browned, about 10 minutes.
Add in the carrot, tomato paste, tomato sauce, mustard, honey, vinegar, chili powder, paprika, salt and pepper. Mix and simmer until thick, about 10 minutes.
Meanwhile, cut the zucchini in half lengthwise, then use a spoon to carefully scoop the flesh out of the zucchinis.
Trim off the ends, and place on a rimmed baking sheet, cut side up.
Fill each with Sloppy Joe mixture, it will mound over, this is what you want.
Sprinkle with cheese (this holds the stuff zucchini together) and place in the oven.
Bake for 25 minutes, until zucchini is tender and cheese is melted.
