- Core of the apples partway from the top down, removing the core and seeds but leaving the bottom intact. You can easily do this by using a paring knife to cut a circle around the core, and then scooping the center out with a spoon.
- Place the cored apples in a baking dish.
- To a small bowl, combine the cranberries, walnuts. Mix well, and then transfer to the apple centers.
- In the same small bowl, combine the brown sugar, oatmeal, and coconut oil. Mix well, and then sprinkle over the tops of the apples.
- Bake for one hour, or until the apples are soft and the top is browned.
- Let sit for 10 minutes before serving.
