This easy baked apples recipe makes a wonderful dessert. I like to add the baking apples to the oven when I serve dinner, so by the time dinner and the dishes are done, dessert is ready.You can use any kind of nuts in these baked apples, and if you are gluten-free make sure to get gluten-free oatmeal for this recipe for apples. I like use Honey Crisp apples, but any apples will work in this recipe. I do recommend you choose a sweet apple though, so you don't have to add more sugar to sweeten these oven roasted apples.
Core of the apples partway from the top down, removing the core and seeds but leaving the bottom intact. You can easily do this by using a paring knife to cut a circle around the core, and then scooping the center out with a spoon.
Place the cored apples in a baking dish.
To a small bowl, combine the cranberries, walnuts. Mix well, and then transfer to the apple centers.
In the same small bowl, combine the brown sugar, oatmeal, and coconut oil. Mix well, and then sprinkle over the tops of the apples.
Bake for one hour, or until the apples are soft and the top is browned.
