To make this blueberry sauce for cheesecake, double the recipe to have enough for the entire cheesecake.

Instructions
 

  • Add the blueberries to a microwave safe glass bowl.
  • Place in the microwave and cook on high for 1 minute.
  • Remove from the microwave, mix well, and add in any additional ingredients (lemon zest, vanilla) you desire.
  • Pour over pancakes, waffles, or cheesecake.

  • Use Frozen Berries… There’s something about the defrosting of the blueberries in this recipe that helps the berries release more juice and turn into a sticky, sweet, perfect blueberry syrup.
  • Add a Boost of Flavor with Zest… Lemon (or orange!) zest is zero calories and adds a ton of flavor! Add it in after you cook the blueberries.
  • Give the Recipe Complexity with Vanilla… Real vanilla extract will help take this from a simple blueberry compote, to a fancy berry sauce. It’s not required, but fun to add from time to time.
