  1. Preheat a griddle or skillet over medium heat.
  2. To a medium bowl, combine the cottage cheese, eggs, and maple syrup. Stir to combine.
  3. Add the flour, baking powder, and salt. Mix together until just combined.
  4. Spray the griddle lightly with olive oil, then pour 1/4 cup of batter onto the griddle for each pancake.
  5. Cook, undisturbed until the pancakes begin to bubble. Flip and cook the second side until golden brown (do not squish down).
  6. Serve with your favorite optional toppings.
