  • 1 can 15-ounce of pinto beans , drained and rinsed
  • ¼ cup Homemade Salsa (or store-bought)
  • 6 corn tortillas

  • Preheat a skillet over medium low heat.
  • Lightly spray with olive oil, then add the eggs and the taco seasoning.
  • Cook for 3 minutes, then scrabble with a spatula and cook until the eggs are cooked through. Remove from the heat.
  • Meanwhile, add the pinto beans and salsa to a medium bowl. Use a fork to gently mash the beans, and mix the salsa in.
  • Steam the tortillas according to the package (wrap in wet paper towels and microwave for 20 seconds) until soft and pliable.
  • Spread the bean mixture over one side of each tortilla.
  • Top with taco flavored eggs and desired toppings.
