- 1 jalapeño or Serrano pepper
- Juice of 1 lime
- 4 large tomatoes
- ½ cup cilantro
- Salt and pepper

Meal Prep: This salsa gets better while it marinates, so making it ahead of time is great! I like to make it the day before.
Storage: Will hold in the fridge for 4-5 days, does not hold well in the freezer.

Ingredients
- 1 white onion chopped
- 1 jalapeño or Serrano pepper ribs and seeds removed, chopped
- Juice of 1 lime
- 4 large tomatoes chopped
- ½ cup cilantro chopped
- Salt and pepper to taste

Instructions
- Combine the onion, jalapeño and lime juice to a medium bowl.
- Let marinate while you chop the tomatoes and cilantro.
- Add in tomatoes, cilantro and a pinch of salt and pepper, and mix well.
- Cover and place in the fridge for 30 minutes to marinate before serving.
