How to Make Ceviche:

  1. Chop the fish or shrimp, and add to a nonreactive bowl (such as a glass bowl) as you work.
  2. Squeeze the lime juice over the top, cover and refrigerate for 2 hours. In this time the lime juice will cure the fish or shrimp.
  3. In a separate bowl combine the tomatoes, Serrano peppers, onion and cilantro, set aside in the fridge to marinate.
  4. When the fish has a cooked like consistency, pour off most of the lime juice, leaving about 2 tablespoons in the bow.
  5. Add in the chopped veggies and mix well.
