Making ceviche is easy and fun! It’s a great way to work with a new way of “cooking” as you cure the fish or shrimp, rather than heating it.
Basically, the shrimp or the fish will “cook” in the lime juice, in the fridge. So be sure to give it the full two hours of curing time in the fridge for best results.
Make sure to use a glass bowl to make this easy ceviche… Plastic could melt in curing the process, or worse, leach chemicals into your food.
How to Make Ceviche:
- Chop the fish or shrimp, and add to a nonreactive bowl (such as a glass bowl) as you work.
- Squeeze the lime juice over the top, cover and refrigerate for 2 hours. In this time the lime juice will cure the fish or shrimp.
- In a separate bowl combine the tomatoes, Serrano peppers, onion and cilantro, set aside in the fridge to marinate.
- When the fish has a cooked like consistency, pour off most of the lime juice, leaving about 2 tablespoons in the bow.
- Add in the chopped veggies and mix well.

- Juice of 7 limes
- 4 cups chopped tomatoes about 5 tomatoes
- 2 Serrano peppers ribs and seeds removed, minced
- ½ white onion minced
- ¼ cup chopped cilantro

- Lime wedges
- Pico de Gallo
