Healthy and Delicious Avocado Quesadilla Recipe

I love avocado and Greek yogurt so much I create meals around them and when I get to combine them I am over the moon excited! This Avocado Quesadilla Recipe is fast and delicious and unlike my delicious Grilled Avocado Sandwich I can also indulge in my favorite Greek yogurt.

So enough about my love affair with super foods, lets get to cooking.

Makes 2 Avocado Quesadilla servings.


  • 2 Whole Wheat Tortillas
  • 1 Avocado
  • 1/2 cup cheese, your choice, I used some Cheddar and Gruyere
  • 2 tbsp. salsa or favorite hot sauce I like Pepper Plant Hot Sauce
  • 1 tsp olive oil
  • 1/2 cup Greek yogurt- optional

Get started:

Avocado QuesadillaHeat oil in pan on medium while you put the quesadillas together.

On a clean surface lye out the tortillas, top half of each tortilla with avocado, then some cheese. Add salsa, more avocado and more cheese. Fold over and toss onto the heat squishing down and flipping as needed until the center is melted and the tortillas are crisp and browned.

Move to two plates and using a pair of scissors slice the quesadillas, then add some Greek yogurt and if you love as much as I do, some more hot sauce. I love Pepper Plant made close by in Gilroy Ca.
