Ingredients in Healthy Taco Shells
I like to make these healthy taco shells with extra thin corn tortillas. I can find them at my local grocery stores, and I have included a link in the recipe card if you can’t find them. You can also use regular corn tortillas, but the calories will increase a bit and you’ll want to bake them a little longer.
I also supplied you with some seasoning blends, so you can make “Cool Ranch” taco shells, or taco seasoned shells.

- Extra thin corn tortillas (see recipe card below!)
- Olive Oil Spray
- Salt (low sodium tips are below in the nutrition section)
Optional Flavoring:
- Taco Seasoning
- Ranch Seasoning
- Fresh Lime Juice
How to Make Healthy Baked Taco Shells
If you don’t have the taco baking tray (I supplied a link in the recipe card) you can use the grates in the oven. Very carefully (with oven mitts on) drape the taco shells over the grates in the oven. I like to do 2 grates for each taco shell.
But I do recommend getting these taco baking trays, you can also serve the tacos in them, making for a pretty dinner presentation and tacos that won’t fall apart on your plate.


How to Make Skinny Baked Taco Shells:
- Preheat the oven to 425 degrees.
- Wrap the tortillas in a wet paper towel, and microwave for 30 seconds until soft and pliable.
- Spray the tortillas lightly with olive oil and sprinkle over salt or your desired flavoring.
- Add the tacos to the Taco Baking Tray as you work.
- Bake for 5-8 minutes until crispy (or 8-10 for regular corn tortillas).
- Remove from the oven and cool in the baking tray (they will crisp up more as they cool).
- Serve with your favorite taco fillings.
