  • Butter
  • Garlic salt
  • 0% Greek yogurt
  • Cotija cheese
  • Fresh cilantro

How to Make Low Calorie Elotes

You can make these low calorie elotes in the oven, or on the grill.

Either way, you’ll need to make little individual foil packs. One for each ear of corn.

How to Make Healthy Mexican Street Corn:

  1. Preheat the oven to 350 degrees or a grill to medium heat.
  2. Place each corn cob into a large piece of foil (individually).
  3. Brush with melted butter and sprinkle over the garlic salt.
  4. Fold the foil around the corn, sealing to make individual foil packets.
  5. Bake or grill for 30-35 minutes until tender.
  6. Carefully (with oven mitts on) remove the foil from the corn cobs and brush with greek yogurt.
  7. Top with cheese, chili powder and cilantro.
  8. Serve with lime wedges to squeeze over the corn.
