Traditionally, you’d want to use ears of corn to make this recipe. And I did make it with fresh ears, but just in case you prefer frozen corn, I have supplied tips on doing this in the ingredients section below.

Ingredients in Healthy Creamed Corn

Each ear of corn will yield about 1 cup of corn kernels. So if you prefer to make this recipe with frozen corn, you will need 5 cups of corn.

This won’t change the flavor too much, but you will likely want to add in the sugar as you won’t have all the sweet corn “milk” in the recipe.

  • Cornstarch
  • Salt and pepper

How to Make Healthy Creamed Corn

This recipe is fantastic for parties and get togethers. You can store leftovers in the fridge and even serve it cold (many people prefer it that way).

How to Make Healthy Creamy Corn Recipes:

  1. Cut the kernels from cobs into a large bowl.
  2. Into a separate bowl scrape the cobs with the back of a kitchen knife to remove as much of the “milk” as possible.
  3. To a large skillet add the butter and corn kernels. Cook for 5 minutes, stirring occasionally.
  4. To the bowl with the corn “milk” add the almond milk and corn starch and whisk together
  5. To the skillet add the milk mixture and cook for an additional 5 minutes.
  6. Taste and if needed, add 1-2 teaspoons of sugar, then remove from the heat and serve hot.

This low calorie creamy corn recipe is easy and delicious! To make sure it tasted like the full fat version, I did leave a tiny bit of butter in the recipe. This is just for flavor and if you prefer you can swap it out for olive oil.
